I eat both quite willingly right out of the container they came in, but I use green olives, a tiny bit finely chopped, when I want to add a bit of deep aged salt flavor to something, like spaghetti sauce sometimes, or chicken or turkey salad. I'd use it in tuna salad too, but I'm allergic to seafood and shellfish.
