I'd say my breaded pork chops, mashed potatoes and gravy, and fried spoon bread.
They turn out real crispy because I pound them thin before breading them in coarse cracker crumbs and frying them in peanut oil and butter. I use the leftover egg and cracker crumbs which I add a tablespoon or two of self-rising flour and a bit of milk to until I get a stiff batter which I drop by spoonfuls into the remaining hot oil to fry until golden. The leftover chops and spoonbread is yummy even the next day, if there are any leftovers. ;o)
