My very favorite is a desert cheese called Apricot Stilton. Yum! But because it's usually $16-18 a pound, I only get a small piece of it for myself at Christmas. What I eat mostly, and I like it with apple slices, is a premium brand of New York Extra Sharp Cheddar Cheese. That's about $3.59 a pound which is more in my budget. I also like shaved parmesan cheese with apple slices. If you've only had grated or shredded parmesan, you don't know what you're missing. ;o)
